Taste Kitchen at Number One Park Lane

I launched my menu at Number One Park Lane terrace at the Intercontinental Hotel. The two-month pop-up celebrated the publication of my debut cookbook, Taste Kitchen: Asia.

Showcasing some of my most loved dishes from my new cookbook, the menu is the ultimate taste guide, grouping dishes by flavour to help you better understand your unique palate. First, work out your flavour from the flowchart—Tarty, Spice Master, Comfort, Refined, Kiddish or Dark Horse—then see which dishes match your palate.

There will also be copies of Taste Kitchen: Asia available to take home, so you can recreate some of the dishes you’ve experienced.

Taste Kitchen will be the yummiest bookshop in London!

With an emphasis on sharing, highlights from the small plates include PFC, which is my take on fried chicken (featuring on MasterChef: The Professionals Christmas Rematch 2021), sea bass kinilaw with prawn oil and pork crackling, and Sichuan pepper lamb tartare.

Buttered cauliflower steak korma with peshwari crust, gochu-miso monkfish with kimchi, and short rib rendang with beef dripping Jersey Royals feature on the large plates section. And alongside these, there are plenty of complementary sides from spicy 15-hour gunpowder potatoes to a refreshing fennel and cucumber slaw.

Desserts are short—and literally—sweet: a pillowy Japanese cheesecake, an indulgent miso sticky toffee pudding, a vibrant yuzu-lemon tart(ish) and a watermelon granita spiked with wasabi.

My Role

The residency was my first expression of putting my food on the map.

I used my background as a development chef to create comprehensive training packs to guide my team in consistently creating great quality dishes.

The menu was innovative and playful, creating a personal bond between the guest and my food.

I enjoy social media and creating marketing videos, I created videos showcasing the menu, events, food, and people behind the scenes to give guests a greater insight into the kitchen and the food whilst promoting the restaurant. I worked with the in-house social media team and photographer to professionally shoot and style the food on the menu.

I liaised with journalists and PR teams to promote the restaurant and the launch of my book.

I worked with in-house designers and landscapers to design the overall look and feel of the restaurant.

During the residency service, I loved chatting and interacting with guests and hopefully adding the experience!

The Feedback

Taste Kitchen got amazing feedback, and we achieved the top 10 of all the restaurants in London on Open Table within two months! Such a shame we couldn’t continue; who knows how far we would get! 🤩
