Nomadic Dinners

A unique dining experience where I cooked over the fire in the woods for a popup series event serving 180 guests over 2 days. This was a 8 hands dinner with the 4 other MasterChef finalists. I served a canape and fish course of

  • crispy squid ink cracker with nam Jim and tomato chutney

  • octopus and bone marrow bento, with octopus dashi, and a choice of 6 different sauces to choose from according to your palate.

I was invited back to host a Japanese yakitori masterclass 2022 for 40 guests in 2 sittings. The guests were welcomed with a drink and bread and butter and then were guided around the gardens and wild herbs were picked for the dinner. I showed guests how to butcher a chicken and prepare yakitori. This followed a 2-course menu with bbq skewers, miso soup, mushroom rice, edible flower salad and charred mochi.
