Serves: 2-4 depending lunch or dinner
Difficulty: Easy
Cook Time: 30-45 Mins
Ingredients
splash oil (I like cold-pressed rapeseed)
2 shallots or 1 onion, sliced
2 garlic cloves, sliced
1 head broccoli, florets and stem sliced
2 large handfuls kale, sliced
1000ml chicken or veg stock (1 stock cube)
30g butter
1 tbsp plain flour
125ml milk
100g blue cheese
Method
Heat a large pan over medium heat. Add oil and fry the shallots and garlic until softened.
Add all the broccoli and fry for 5 mins
Add the stock and bring to the boil, add the kale and cover with a lid. Cook for 5-10 mins until all the veg is soft and cooked. Add all to a blender and blitz until smooth.
Wipe the pan and add the butter with the flour and cook to make a roux, add the milk (don’t worry about the milk being warm.) Allow to thicken slightly and make sure there are no lumps. Add back in the broccoli soup and bring to a light boil.
Finish with crumbled cheese and let the cheese melt into the soup. Serve with crusty bread or a cheese toastie if you’re feeling decadent.
