Philli Armitage-Mattin: ‘I fell in love with the science of food’

The chef speaks to Prudence Wade about her obsession with the science of food, buying a one-way ticket to Japan, and suffering from imposter syndrome

“I love sweets and comforting flavours,” she says, with a laugh. “So basic – I’m all about sweetness. I love everything that’s bad for you, which is probably not good. But I also love umami and I love spice as well.”
