I will meld refined dishes inspired by my travels around Asia with the restaurant's signature plateless service style. The multi-course tasting menu will feature an eclectic array of dishes (£120pp), and an optional wine pairing will also be available.

Highlights will include:

• Oysters with Green Nam Jim, Kelp, Lime Leaf Kombucha

• Crab Chawanmushi, Peas, XO Sauce

• Chinese BBQ Lamb, Sichuan Lamb Skewer with Aubergine, Sesame Soy Sauce, Chiu Chow Chilli Oil

• Brown Butter Cake, Pine Nut Purée, Strawberry Sansho Cheong, Whey Ice Cream, Pickled Strawberries

Dinner from Tuesdays to Friday, and lunch on Friday.
