Smoked Tofu and Rice Noodle Salad under 25 mins

This is a vegan version of a Vietnamese noodle salad recipe

Inspired by the flavours of Vietnam

I love Nouc Cham - it’s a Vietnamese dressing with loads of lime, sugar and fish sauce. It packs a punch, it’s VERY good. I’ve adapted this classic dressing to make it plant-based and don’t hold back this one - it’s bloody delicious.

I’ve using smoked tofu here. I love smokey flavours and this ingredient is a great product that is almost meat - I’ve simply roasted it in Kejap Manis. If you haven’t heard of Ketjap manis before, let me introduce you. It’s a sweet, thick soy sauce and is mainly found in Indonesia, it’s sometimes called ABC sauce if you’re looking out for it. I love it and will just have it with a bowl of rice. The sugars in the kejap manis caramelise around the tofu and you can a deep treacle colour.

Ingredients

1 Block Smoked Tofu

2 tbsp Ketjap Manis

1 tbsp sesame oil

10 Tenderstem Broccoli

1 onion: sliced

10 Cherry tomatoes

1 pack thin rice noodles

Dressing

1 Lime

1 tbsp brown sugar

1 tbsp soy

½ garlic clove; pureed

½ red chilli; chopped diced


Method

1.        Heat the oven to 180c

2.       Slice the tofu and coat in kejap manis and sesame oil

3.       Add the tofu to a tray with broccoli, onion and pop the tray in. the oven to roast for 10-15 mins

4.       Squeeze lime juice, brown sugar, soy, garlic, red chilli & 3 tbsp of boiled water

5.       Slice the cherry tomatoes and mix with the dressing

6.       Add boiled water and pour over the noodles and allow to soak & soften

7.       Take out the tofu from the oven

8.       Add the noodles to the bowl, take the onions from the tray and add with broccoli and tofu finish with the tomatoes and dressing.

9.       Smashed it!
