How to Cook the Perfect Steak Everytime

Hey there, tasters! Are you ready to elevate your steak game? If you love a perfectly cooked steak, then you know that achieving the perfect balance of tenderness, juiciness, and flavour can be a bit of a challenge. But fear not, because today I will share my top three tips for cooking the perfect steak.

Tip #1: Start with a Good Quality Steak.

The quality of your steak will play a big role in the final outcome. Look for steaks with a good amount of marbling, which is the white fat dispersed throughout the meat. This will help keep the steak tender and juicy as it cooks. Also, consider the cut of the steak. Ribeye, Sirloin are all great options for a steak that will be juicy and tender. A hanger steak is a little less well known however, if cooked right (medium) can be a really great cost-effective option. I like to use my local butcher and ask for dry-aged thick-cut, ethically sourced, sustainable beef. This minimises the carbon impact, and most importantly, the cows have had a happy life, and the meat is more flavourful due to the ageing process. I like to use a thick-cut steak as it

Tip #2: Seasoning to Perfection

I like to sprinkle the steak with salt about a day before cooking. I will add the steak to a rack in and liberally sprinkle it with salt. Then allow it to rest in the fridge overnight. This even when using supermarket steak can help dry the meat out on the outside resulting in a deep caramel crust. Salting the steak prior to cooking allows the salt to permeate through the steak allowing for a richer flavour. This also means you won’t need to remember to salt the steak before cooking. I also like to use a heavy pan like a cast iron to cook the steak as it retains a lot of heat, is non-stick and oven-proof. I will preheat the pan on a burner for around 5 mins until smoking hot before adding my steak. Do not turn the steak too often, it was thought that this loses moister, however, this is not true. It will prevent you from getting a deep rich crust though which is my preference.

Tip #3: Get the Temperature Right

The key to a perfectly cooked steak is getting the temperature just right. What most people get wrong though is the temp before resting vs after. As a rule of thumb, the meat temperature will increase by approx 10% of the overall internal temperature, usually about 4-5c.

Remove the steak from the oven at an internal temperature of the steak should be between 47°C and 55°F for medium-rare, 55°F to 60°F for medium, and 60°F to 65°F for medium-well. To achieve this, use a meat thermometer to check the temperature of the steak as it cooks. And don't forget to let the steak rest for a few minutes after cooking to allow the juices to redistribute.
